BANANA WALNUT CAKE

Bananas - 4 large ( I used chiquita )
Lemon juice - 1
tablespoon Walnuts - 5-6
Refined flour (maida) - 2 cups
Baking powder - 1 teaspoon
Soda bicarbonate - 1/4 teaspoon
Butter - 10tablespoons
Sugar - 3/4 cup
Eggs - 3
Vanilla essence - 1 teaspoon
Coffee powder - 1 teaspoon
Cinnamon powder - 1 teaspoon
Milk - 10 tablespoons

Method:-

1. Preheat oven to 180°C. Grease a baking dish.
2. Peel and mash bananas, add lemon juice and mix well. Shell walnuts and coarsely chop them.
3. Sieve flour with baking powder and soda bicarbonate.
4. Cream butter and sugar till light and fluffy.
5. In a separate bowl break eggs one at a time and beat them well. Add the beaten eggs to the butter and sugar mixture and mix.
6. Mix walnuts, vanilla essence, coffee powder and cinnamon in a bowl and add to the flour mixture. Add the flour mixture alternating with the banana mixture to the butter, sugar and egg mixture.
7. Add milk. Mix lightly. Pour the batter into the greased baking dish and bake in the preheated oven at 180°C for about one hour.
8. Let it cool in the dish initially and then gently unmould it onto a rack and leave it to cool. Cut into slices and serve with tea.

Pineapple pachadi

INGREDIENTS

1.Pine apple (ripe) - 1 nos.
2.Grated coconut - Half coconut
3. Cumin seeds(Jeerakam) - Half tsp
4. Turmeric powder - 1 tsp
5. Chilli powder - 1tsp
6. Sugar - 4 tsp
7.Mustard seed - 1 tsp
8. Curry leaves
9. Yoghurt - Half cup

PREPARATION METHOD

Peel of pineapple skin and chop into small pieces. Grind grated coconut with cumin seeds and keep aside. Boil chopped pineapple pieces,turmeric powder,chilli powder and salt. Smash it and add coconut paste mix and cook for 3 - 4 minutes.Finally add sugar and mix well.Put off fire and add yoghurt.Take a pan for spluttering mustard seed and curry leaves in oil and add to this pachadi.You will get a nice and tasty pineapple pachadi.

Mango pachadi

Raw mango(big) - 1 no
(cut into small pieces)
Red dry chilly
Bengal gram(Kadalaparippu) - 2 tsp
Coconut - 1/4th of one
(scraped)
Mustard seeds - 3 tsp
Mustard seeds - 1 tsp for seasoning
Oil - As reqd
Salt - As reqd
Curd - 1 cup

Preparation Method:-

1)Fry Bengal gram and dry chilly in oil.

2)Grind it with coconut, mustard and salt into a coarse form.

3)Add water and grind to a thick paste.

4)Add handful cut mango and grind coarsely.

5)Heat oil in a pan.

6)Splutter mustard and curry leaves and pour the paste into it and switch off the stove.

7)Add curd on top of it and mix well.

8)Add the left over mangoes and mix well.

:- Goes well with rice.
