INGREDIENTS:
  • 1 Cup flour
  • 2 Eggs
  • 2 tbsp Cocoa powder
  • 3/4 cup of Butter
  • 3/4 cup of Sugar
  • 1 tsp baking Powder
  • 1/4 cup milk
  • 1/3 cup chopped walnuts

METHOD
  • Preheat the oven on "Convection Mode" at 180 degree C.
  • Grease the cake tin with butter.
  • Sieve flour,cocoa powder,baking powder together in a bowl. Keep aside.
  • Beat butter,sugar and egg till fluffy and creamy in another bowl.
  • Slowly mix the sieved flour mixture and the beaten eggs.Add milk to make smooth batter.Also add chopped walnuts to it.
  • Pour the cake batter into greased cake dish and bake at 180 degree C at lower rack for 35-40mins at convection mode.Allow to cool.Garnish with icing and fresh fruits of your choice.

TIPS:
  • Preheating of oven is very important.
  • To avoid a dry or dehydrated cake ensure the cake batter is of a thinner ribbon consistency i.e. the batter should fall of from a height in a ribbon shape.
  • You can adjust the consistency by adding more milk.

Ingredients

Eggs 6
Ginger, chopped 1 inch piece
Green chillies, chopped 2 tablespoons
Coconut, scraped 1 tablespoon
Coriander powder 1 tablespoon
Cloves 3
Cinnamon 1 inch stick
Green cardamoms 2
Turmeric powder 1/2 teaspoon
Milk 1/4 cup
Salt to taste
Ghee 3 tablespoons
Cashewnuts, chopped 8
Onions, chopped 2 medium
Fresh coriander leaves, chopped 2 tablespoons


Method

Grind together ginger, green chillies, coconut, coriander powder, cloves, cinnamon, cardamoms and turmeric powder. Break eggs, separate whites from yolks into a bowl and beat the egg whites till stiff. Add the egg yolks, milk and salt to taste to the egg white mixture. Beat the mixture again after ten minutes and place the egg mixture bowl into a large vessel containing a little water and boil till the egg is set. Cut the set eggs into cubes.Heat ghee in a pan and fry the chopped cashewnuts till golden brown. Drain and keep aside. In the same ghee add chopped onions and fry till light brown. Add the ground masala and fry till the ghee floats to the top. Add half a cup of water and bring to a boil. Then add the egg cubes and cook gently till the korma thickens. Garnish with chopped coriander leaves and serve hot with rice or paranthas and chutney.

Ingredients

Eggs, hard boiled , peeled and halved 6
Basmati rice, soaked and drained 1 1/2 cups
Oil 2 tablespoons
Cinnamon 1 inch stick
Green cardamoms 2
Cloves 3
Onion , sliced 2 medium
Ginger paste 1 teaspoon
Garlic paste 1 teaspoon
Tomatoes, chopped 2 medium
Fresh coriander leaves, chopped 2 tablespoons
Fresh mint leaves few
Red chilli powder 1 teaspoon
Turmeric powder 1/4 teaspoon
Coconut milk 1/2 cup
Ghee 1 teaspoon
Salt to taste


Method

Heat the oil in a deep pan. Add the cinnamon, cardamoms and cloves and saut for one minute. Add the onions and saut till soft. Add the ginger paste and garlic paste and saut till fragrant.Add the tomatoes and saut for two minutes. Add the coriander leaves and mint leaves and continue to saut for two minutes longer. Add the chilli powder, turmeric powder and saut for a few seconds. Add the coconut milk, two-and-a-half cups of water and salt. When the water comes to a boil, add the rice and ghee and mix well. Cover and cook over high heat for five minutes. Lower heat and continue to cook for ten minutes, or till the rice is done and all the moisture has been absorbed. Transfer the biryani to a platter, garnish with boiled eggs and serve hot.

Ingredients

Rice - 1 cup
Red gram(Thuvaraparippu) - 3/4 cup
Onions(peeled) - 1 cup
Potatoes(diced) - 1 cup
Peas - 3/4 cup
Tomatoes(Large) - 2 nos
Tamarind juice - 2 tbsp
Salt - As reqd
Ghee - 3 tbsp
Oil - 4 tbsp
Bisibele bhath masala powder-2 tsp
Turmeric powder - 1/2 tsp
Chilly powder - As reqd
Chopped coriander leaves
Fresh grated coconut

For bisibele bhath masala powder:

Coriander seeds(Malli) - 2 tsp
Fenugreek(Uluva) - 1/4 tsp
Cinnamon(Karugapatta) - 1" piece
Cloves(Grambu) - 3 nos
Cardamom(Elakka) - 1 no
Red chillies(Kollamulaku) - As reqd
Grated dry coconut





For making the masala powder:

1)Roast all the ingredients in little oil, till good smell comes. Add dry coconut and fry for another minute. Grind it and store in a air tight container.

For making Bisibele Bhath:

1)Cook diced potatoes (don`t overcook).

2)Pressure cook red gram/toor dhal by adding turmeric powder.

3)Cook rice separately and allow it to cool.

4)Soak tamarind in water for sometime and then extract the juice.

5)Heat oil in a pan.

6)Add little bisibele bhath masala powder.

7)Add onions and fry them till translucent.

8)Add tomatoes and cook for another 3 minutes.

9)Add peas, cooked potatoes and cooked dal.

10)Add remaining masala powder, tamarind juice and about 1 cup of water and bring it to boil.

11)Add salt and chilly powder as required.

12)While boiling, add cooked rice and simmer for another 5 minutes.

13)Garnish with fresh coriander leaves and fresh grated coconut.

14)Pour little ghee on top.

Ingredients :
2 cups rice
100 gms beans, finely chopped
2 carrots, finely chopped
1 onion, sliced
100 gms cabbage, finely chopped
2 spring onions, finely chopped
2-3 green chilies, cut lengthwise
1 tsp ginger, chopped finely
1 tsp garlic, finely chopped
2 tbsp soya sauce
salt & pepper to taste
3 tbsp oil


Method of Preparation :
Pick, wash and soak the rice in enough water for 10-15 minutes and drain.
Boil water, add rice and little salt.
Cook uncovered on low heat till rice is tender.
Take care not to overcook the rice. Each grain of rice should be separate.
When rice is done, drain and add some cold water and drain again using a large sieve and set aside.
Heat oil in a kadhai/large pan and stir fry all the chopped vegetables.
Cook for 3-4 minutes.
Take care that vegetables are not overdone, they should be crisp.
Mix salt and pepper to taste.
Add the cooked rice and mix well. Now mix the soya sauce to it.
Cook the chinese fried rice for 2-3 minutes and serve.

Ingredients :
kg basmati rice
kg mutton, cleaned and cut into big pieces
kg onions, finely sliced
cup finely sliced tomatoes
10 green chillies
1 inch piece of ginger
8 garlic pods
1 tsp pepper powder
1 tsp turmeric powder
5 nos cashew nuts
4 sticks cinnamon (daalchini)
4 cloves (laung)
4 cardamom (elaichi)
1 tbsp curd
tsp fennel (saunf)
bunch mint leaves
bunch coriander leaves
cup ghee
cup oil
salt as required

Method of Preparation :
Grind ginger, garlic, and green chillies into a coarse paste. Clean and soak rice for 30 minutes and keep aside. Heat oil in a heavy bottom pan or kadai. Add the sliced onions and fry till golden brown, then keep aside.

Heat up the remaining oil. Add the rest of the sliced onions and cashew nuts and fry till soft. Add tomatoes, ground paste, turmeric powder, pepper powder, curd, mint, and coriander leaves and saut till the oil starts to separate. Add mutton and cook till the mutton is done.

Add salt as per need. Cook the rice along with all spices and salt, till it is done. Grease a vessel with little ghee. Spread the mutton masala and place the rice over it. Pour 2 tbsp ghee on top of it and sprinkle some roasted onion. Spread the remaining masala and top it with rice followed by ghee and fried onion. Close it with an airtight lid and put it in dum for 10-15 minutes.
