sweet punjabi lassi flavored with cardamom powder and saffron.

Recipe type: beverages
Cuisine: north indian, punjabi
Serves: 2 glasses
Ingredients (american measuring cup used, 1 cup = 250 ml)
  • 1.5 cups yogurt/curd, chilled
  • 7-8 tsp sugar or as required
  • ½ cup water or cold milk
  • ½ tsp cardamom powder
  • 1 pinch saffron (optional)
  • 6-7 almonds or shelled pistachois, chopped or sliced (optional)
  • 1 tsp rose water (optional)
  • ice cubes while serving the lassi
 
Instructions
  1. take the yogurt, cardamom powder, water and sugar in a blender.
  2. you can also blend with a hand blender or use the traditional madani.
  3. blend till the yogurt is evenly blended.
  4. don't over do as then you will get butter floating on top.
  5. serve lassi in tall glasses.
  6. add crushed ice cubes, garnish lassi with some cardamom powder and sliced almonds.
  7. serve the sweet lassi.
  8. you can also chill lassi and then serve.
 
Notes
this punjabi lassi recipe can be doubled or tripled.

mango lassi - thick and smooth mango lassi flavored with cardamom powder and saffron.

Recipe type: beverages
Cuisine: north indian
Serves: 2-3
Ingredients (american measuring cup used, 1 cup = 250 ml)
  • 2 cups of fresh chopped mango pieces, about 3 to 4 medium sized mangoes. I used alphonso mangoes, but you could use any good variety of mango. You could also use mango pulp.
  • 2 cups chilled full fat fresh curd/yoghurt,
  • 2 to 3 tbsp cream 25% to 30% fat or malai (optional)
  • ½ tsp cardamom powder or 2 tsp rose water or a pinch of saffron
  • 4 to 5 tbsp sugar or honey or add as required. this also can be skipped if the mangoes are very sweet
  • few mint leaves for garnish or mango cubes
 
Instructions
  1. Peel the mangoes and chop them.
  2. In a blender or mixer, puree the mangoes with sugar or honey.
  3. Now add the chilled curd/yogurt, cream, the cardamom powder or saffron or rose water.
  4. Blend for some seconds till the everything is mixed well and the yogurt has become smooth.
  5. Pour mango lassi in glasses and serve garnished with mint leaves or cubes of mango
  6. If you want a slightly thin consistency, then add some milk to the mango lassi while blending. You can also add ice cubes while blending.
 
Notes
instead of sugar you can also add jaggery or honey. this mango lassi recipe can be doubled.

an easy, delicious and healthy recipe of a smoothie with mangoes and almonds…. low fat, vegan and nutritious.

  • 3 ripe alphonso mangoes
  • 15-18 almonds
  • 2-3 cardamom or ¼ tsp cardamom powder
  • sugar as required
  • some ice cubes
  • a few mint leaves for garnishing - optional
 
Instructions
  1. peel and chop the mangoes.
  2. crush the cardamom.
  3. add the chopped mangoes, almonds, crushed cardamom, sugar and ice cubes in a blender.
  4. blend till smooth.
  5. pour the smoothie in long glasses or mugs.
  6. top with some chopped mangoes and fresh mint leaves.
  7. serve mango almond smoothie.
 
Notes
1: to thin the smoothie, you can add some water or milk. 

2: the recipe can be doubled or tripled

pudina or mint chaas - cooling drink made during summers using yogurt

Ingredients (american measuring cup used, 1 cup = 250 ml)
  • 1 cup curd/yogurt
  • 7-8 fresh pudina (mint) leaves or 1 tsp dry mint leaves
  • 1.5 cups water
  • 1 tsp roasted cumin powder
  • rock salt or black salt as required
 
Instructions
  1. chop the pudina (mint) leaves.
  2. in a blender add all the ingredients including the pudina leaves and blend till smooth.
  3. serve pudina chaas in glasses with some ice cubes.
  4. you can also chill the chaas and then serve later.
 
Notes
1. the pudina chaas recipe can be easily doubled or tripled.
2. you can also add dry mint leaves instead of fresh mint leaves.
3. if making the pudina chaas for religious fasting like navratri or ekadashi, then add rock salt/sendha namak.
